Easter Chicken Roast



Ingredients

1) 1. Kg chicken, whole

2)
2 dsp coriander powder
6 cloves of garlic
2 one-inch pieces of ginger
4 shallots
1/4 tsp fennel seeds
4 cloves
2 pieces of one-inch long cinnamon

3)
1/4 cup sweet curd
Salt to taste
1/2 cup + 1/2 cup oil
2 cups onion sliced into long peices
1/2 tsp turmeric powder
1 cup tomatoes sliced
2 dsp red chilly powder
1/4 tsp sugar

Preparation

Poke the whole chicken with a fork at many places and keep aside
Blend all ingredients under 2 and add to the curd
Marinate the chicken with this mix for two hours
Fry the marinated chicken on all sides and take out of the oil when chicken is light red in colour
Cook the fried chicken, using boiling water, until the gravy thickens
Top up the oil that was used to fry chicken and saute onions in it
Add turmeric to sauted onions. Then add tomatoes and when the oil surfaces, add chilly powder mixed with a little water
Add the cooked chicken to the masala mix and cook so that the gravy coats on the chicken
Serve hot
